FAMILY, PASSION AND COMMITMENT
After a long tradition in the production of cavas, the passion for wines of Joan Carol led him in 1996 to found Cellars Carol Vallès. He decided to settle in the old farmhouse of Can Parellada, acquired by his grandfathers more than 100 years ago. With the indispensable help of his wife, Teresa Vallès, Joan Carol begins to market the cavas that the family had been producing for years. The “Parellada i Faura”, bearing the surnames of Joan’s mother; and then “Guillem Carol”, who bear the name of his son. Past and future. Tradition and innovation.
The strong commitment to the traditional method, the unique blends and long agings made the cellars of the farm to reach several recognitions and collect prestigious prizes.
Now, the second generation has taken the rudder of the wineries. The same restlessness, passion and values that the project was born are strongly keep: a firm commitment to the environment, the long aging of the cava and a commitment to sustainability.

Organic farming is based on a careful observation of our terroir in order to coexist with it in harmony and carry out agricole treatment practices as much sustainable as possible. We do not treat with chemical insecticides, pesticides or herbicides. We also maintain spontaneous vegetation cover of the soil that favor the preservation of moisture and sponginess of the
ground and plow it to get green manure. We do not apply chemical fertilizers favoring the biodiversity of the
property that helps us protect the vineyard.

Notes of peach and ripe fruit, citrus notes of lemon skin.t.
Highlights the ripe white fruit, the apple and the peach, the butter and brioche. A fruity, lively, very fresh cava with good acidity.
Crispy and fine bubble. Refreshing finish.
Parellada i Faura pairs with countless dishes, from aperitif to desserts. So versatile and enjoyable throughout the meal.

Straw yellow with golden touches.
We highlight the butter and gingerbread at the same time as stone fruit: peach and apricot and even herbal and citrus notes like fennel or lime.
It has a medium body and an acidity that is still very present although is perfectly balanced with toasty notes than long aging provides. Small and well integrated bubble

Cherry red color with brilliant tones.
NOSE
Expressive. Intense raspberry with aroma of forest fruits with notes of spices and mustard.
PALATE
Elegant and harmonious between color aroma and taste. Very good adicity. Tannins are smooth and flavoursome.

Tasting Notes
Straw yellow with golden touches.
Complex. Vanilla, apple jam, dried fruit and toasted bread.
Very unctuous, notes of ripe fruit and caramel melted with soft toast and buttery as a result of the long aging with the lees. Fine, persistent and very well integrated bubble.
It is a perfect cava to pair with hearty meals: meats, stews and spoon dishes. These suck and soak meals pair perfectly with its toasted and woody notes. It is also perfect for fish “suquets” or rice that enhance its aging notes. It is the perfect sophisticated companion.

Tasting Notes
Golden tones and honey.
The complexity of its aromas: compote, brioche, toffee, ripe fruit, arrop, plums and nuts will delight us and make us realise how it changes and becomes more and more interesting and complex in the glass. Takes time to taste, time for enjoy.Glyceric and greasy palate, very generous and velvety. The bubble is small, almost imperceptible, thin, creamy and very well integrated . Definitely, a delicate wine cava.
