the legend of the blue winery

Pago de Ina is the dream of the Cabanas family, linked to this land for generations. Paco and Ina are the soul of this family project, which they share with their children, and whose greatest hope is to make one of the best Ribera del Duero wines.

 

For this they practice a sustainable viticulture respecting to the maximum the fruit in search of the expressivity of the terroir. Their wines are unique and very personal, standing out for their elegant style.

 

The Cabanas family is a large family formed not only by its members, but by all those friends who sit at their table to share with them the dream that Pago de Ina is.

A low rainfall (450mm / year), cold winters and dry summers with pronounced thermal oscillations during the seasons, make the Ribera del Duero, a privileged enclave for the quality of our vines. The soils are poor and of little production with vines of more than 30 years, located between 600 and 800 meters high, a mixture of different soils. The selection of bunches is carried out in the field. Control of weight and volume of the berry; monitoring of aromatic potential.

 The harvest is 100% manual and transported in boxes of 20 kg.

Once the grapes enter the winery, a second selection of bunches is made on the selection table; destemming and whole grape without squeezing. Inertization of deposits and incubation at low temperature. Constant fermentation control at 24ºC through the radiant floor. Humidity control. Soft and gravity overhauls, short macerations and malolactic fermentation in barrel.

6 months in French oak barrels.

 

tasting notes

Intense cherry red color, with purple highlights, with dense and colored tear. In the nose, aromas of red fruits and strawberries with slight notes of roasting. In the mouth, it is fruity, fresh, with balanced acidity and soft tannins and a long, lingering finish.

tasting notes

Delicious, ruby red color with violet iridescence. On the nose it is intense and persistent, the red fruits, raspberry and redcurrant are in perfect balance with the lactic nuances with touches of yogurt and mentholated background. Toasted and roasted notes that, when oxygenated, resemble caramel, coffee or chocolate. Silky, elegant and wide in the mouth. It is balsamic and fresh in the middle of the mouth. Harmonious finish with a long aromatic persistence.

winemaking

Once the grapes enter the cellar, a second selection of bunches is carried out on the selection table. Grapes from a single plot located 800 meters above sea level, heritage of our ancestors, old vines with low production (3.500kg / ha), small berries, concentration of aromas and harmony, 6 days of cold pre-fermentation criomaceration, malolactic fermentation in barrel , selection of barrels: 36 months of drying, extra fine grain, medium long roasting, 100% new French oak.

15 months in new French oak barrels,

very fine grain and medium toasted

and 1 year in bottle.

 

tasting notes

Zoñan is a "Terroir" wine, the result of a pampered selection of bunches in the field and of a single soil. Sublime red caramel color with violet sparkles. Explosion of black fruits on the nose, with balsamic notes, floral memories (violets) and small touches of coffee. Spectacular step by mouth full of sensations. Elegant entry to order and full of harmony.
