Fermoselle
Fermoselle has a very rich subsoil, a cultural heritage formed by a network of labyrinthine streets that has numerous hidden vestiges of the Spain of the Reconquest.
"The town of 1000 wineries" was one of the last Jewish strongholds of the time and its different peoples and cultures expanded and modified the uses of these.
Bodegas Pascual Fernández recovered two of these old wineries, buildings listed and protected as Historical Artistic Heritage of Spain, for the Production Room, Barrels and Bottle Rack, valuing vernacular architecture that enhances the Jewish footprint in the granite of its arcades, in the water well that served for purification rites and on the seven steps, one by one, that were stepped on to enter the cistern.

Winemaking
Destemming and soft crushing, with controlled fermentation at 25ºC in small stainless steel tanks. The wine does not undergo Malolactic Fermentation and part is aged in new French oak barrels and part in small stainless steel tanks with its fine lees.
The barrels remain at a constant temperature of 12ºC and 80% humidity in centennial underground cellars while the deposits remain at the same temperature of 14ºC in a controlled manner. 5 months of aging on lees in stainless steel tank.

Tasting Notes
Ruby Red Color, characteristic of the variety, bright and elegant as well as intense and attractive. On the nose it transmits the exuberance that it will give us with very fine and elegant aromas of moss and fresh forest, with touches and evidence of wild fruits. And on the palate, it confirms the elegance, a fleshy wine with very present but fine tannins, soft and with a very long sensation on the finish. Very Fresh, with clear, crisp evidence of fruit. A very sweet and "addictive" wine, very friendly on the nose and mouth and that does not let you stop tasting it.

Tasting Notes
Greenish yellow color, clean and very bright, subtle and attractive. On the nose it is exuberant and very intense, very fruity, with hints of orchard fruit, light touches of citrus, hints of dried fruit, walnuts and flowering pollen. On the nose it is exultant and enveloping, passionate and not tiring. In the mouth it enters with a lot of nerve, fills the whole mouth, is unctuous and reminds of a certain salinity, very long and intense aftertaste leaving a sweet aftertaste. Balanced acidity, it is a fresh, sweet and intense wine.

Winemaking
Pre-fermentative maceration with temperature control for 72 hours. Controlled alcoholic fermentation at 23º in small stainless steel tanks. The wine remains in small stainless steel tanks with its fine lees for 5 months.
Aging: Part in new French oak barrels for 8 months and part in stainless steel tank for the same months.

Tasting Notes
The elegance of the wine is obvious with bright green tones, very clean and sparkling. On the nose it is a very complex wine. It has a very fresh aroma, with a vegetable profile that gradually releases notes of ripe fruit such as peach. Aromas of ripe fig and banana also appear. Aromas that give it a complexity that envelops the desire to continue drinking and discovering. It never loses the feeling of freshness. On the palate it has a well-marked acidity and a long, endless finish, an exciting wine for our mouths, which awakens sensations that convey to us the excellent evolution of the wine. It is a gastronomic wine that will perfectly accompany any menu and that can last for a long time in the bottle.
