José Antonio, agricultural technical engineer and Pedro, architect, have been friends since childhood, have studied in the same school, in the same collage and now also share a common project, Bodegas Tierra Savia.

This project is born of the love that both feel for nature and the region in which they have been raised. Although they have been a few years away from their native Cazalla to pursue their university studies, they have always been very attached to their land. His final projects were linked to Cazalla and they could already see that the vine was going to be part of their lives.

 

Tierra Savia is located in the Sierra Norte de Sevilla Natural Park, an area declared as a Biosphere Reserve, and whose skies were recognized in 2014 as the largest Starlight Astronomical Reserve in the world. This region has an enormous winemaking tradition since the XV century, being then the main exporter of wine to America and the germ of the most famous spirits.

The particular way of understanding the viticulture that José Antonio and Pedro have, is to pay special attention to the care and maturation of the grape, collecting it manually, and at the most appropriate time. To achieve the maximum expression of the terroir, the vineyard is cultivated in ecological, conserving the biodiversity and improving the structure of the soils.

At 800 m altitude, imitated in the landscape of mountains and dehesas, it elaborates all its wines in a natural way.

Viogner vines recovered in our vineyards located in Cazalla de la Sierra, north of Seville, in Sierra Morena at 800 meters altitude. This variety adapts perfectly to our climate and inclined slate soils that together with our agroecological work in strict dry land gives back living plants with a lot of personality that allow to express the potential of the variety.

 

Harvest

Manual harvesting in boxes of 15 kilos.

 

Production

10.000 bottles of 75 cl.

 

Winemaking

The Viognier bunches are subjected to a very gentle pressing, whose must begins a slow fermentation at a controlled temperature of 17ºC in order to preserve the high concentration of varietal aromas that the Viognier possesses. After the fermentation process, the wine is aged on its fine lees in storage for five months, which gives it a smoothness and roundness.

Tasting Notes

Luminous yellow color with greenish tones. Very aromatic and exotic, with tropical aromas such as banana or pineapple. Fresh, broad and voluminous. In the mouth, integrated acidity, great long and harmonious final intensity.

Winemaking

The grapes with which it is made are harvested later, obtaining a maturity that allows us to ferment it in used American oak barrels. Then he performs the malolactic fermentation and a 4 month aging in the barrel, during which weekly batonages are carried out for the integration of his own lees.

Aging

4 months of aging in American oak barrels.

 

Tasting Notes

Straw yellow color with golden trim. In the nose, the varietal aromas, mature fruit, and at the same time subtle well integrated notes of the barrel aging prevail. Very friendly entry on the palate, unctuous, harmonious and with a very balanced acidity.

Winemaking

The vinification of the varieties is carried out separately. Ripe grapes with a concentrated must due to its low production. After the encubado in deposits begins a fermentation to soft temperatures to extract his fruit character and the less aggressive tannins. Long macerations that give the wine its aromatic complexity and polyphenolic load. Spontaneously, a slow malolactic fermentation is carried out, which gives way to aging in French and American oak barrels for 9 months.

Tasting Notes

Red wine with intense red color and tile edges. Nose very elegant with a reminder of red fruits along with slightly spiced and toasted aromas of wood. In the mouth, licorice notes, roundness, balance and good structure appear.
